My Top 5 Tips for Getting Back on Track

Labor Day weekend was a success - beach, food, drinks and FUN! If you know anything about where I live - the Hamptons - it is intense here from Memorial Day to Labor Day. It's our "season" so when it's over, we celebrate. If you know anything about me...you know I celebrate hard!



So after a crazy fun weekend how to you get motivated to get back on track? It's not easy but it's certainly possible.






1. Eat a HEALTHY Breakfast - there is no better way to kick off a new week than with something yummy and nutrtitious! I went for my Vegan Chocolate Shakeology this morning and loaded it up with Kale (only good with chocolate ha) and Banana. It makes me feel good that I'm getting 70 SUPERfoods and some greens in my belly first thing in the morning.



2. Drink LOTS of Water - You know H2O is the our most valuable resource and it's my most valuable tool for getting me to feel good after a weekend of too many treats. So fill up and get your agua in, chug it, sip it, just do what you gotta go to get yourself hydrated.

3. WORK OUT - We both know this was coming to the list...do something to get moving. I LOVE that I have a bunch of different workout programs at my fingertips with Beachbody On Demand. I can do whatever level or length of workout that I chose right from my home gym (read: living room).


4. Stay POSITIVE - Let's face it, beating yourself up about slacking off and eating everything in sight doesn't help you get back on track. Wake up in the morning, look in the mirror and tell yourself "I GOT THIS!" The more positive reinforcement you give yourself, the better you'll feel...you know the drill.

5. Share your GOALS - One of the biggest reasons I'm able to stay on track is because I share my goals. I share them with my man, my friends, my accountability group...I'm pretty much shouting them from the rooftops BUT hey, it keeps me accountable.

I've been starting my days a little differently this week. 

My alarm starts ringing, I roll out of bed, get my workout in, and shower...but then I've been making it a priority to be more mindful and spend some quiet time practicing some visualization and meditation.

I use this time in the morning to really clear my mind and set my intention for the day. If I visualize a successful day, week, month...you name it! The further I go - the more amazing things that come to me. I have to admit it also feel pretty amazing when your dreams become your realities.

I've been surrounding myself with smart, savvy businesswomen this week and I feel so AMAZING! I swear that once you give yourself the permission to follow your heart and reach your GREATNESS, you will find awesome opportunities around every corner.

Sweet Treat: ShakeO PB Cups

Sometimes the sweet tooth strikes and there is just no stopping it! When this happens to me, I usually start surfing Pinterest for healthy sweet ideas...I've seen this one around a lot and finally decided to give it a whirl.

This recipe literally takes about 10 minutes to whip up and it TOTALLY satisfied my craving.

This recipes makes eight of these beauties
 You'll need a mini muffin tin, chocolate Shakeology, coconut oil and an all natural nut butter - I used peanut BUT almond would be awesome too.


  • Put 2 tablespoons of coconut oil in a microwave safe bowl for about 30 seconds to liquify the oil.
  • Add 4 tablespoons of chocolate Shakeology and stir until completely combined.
  • Divide the mixture equally into 8 mini muffin tins and pop it in the freezer until it hardens
  • Place a half of a teaspoon of peanut butter on top of each chocolate disc and spread with a knife.
  • Repeat the first two steps and top peanut butter with chocolate mixture - then back into the freezer.


After a few more minutes, pop them out and ENJOY! These are such an amazing substitution for a candy treat and they're packed with super foods!!

VEGAN Mac & Cheese

I've been venturing into veganism for a month or so now. The one thing that's been hardest for me to give up is CHEESE! Even though I use it sparingly - there's something about the deliciousness that I can't walk away from. I figured if I tried out some cheesy comfort food in vegan form that it will help me in my journey to becoming totally free of animal products!

I came across this recipe for mac & cheese in one of my vegan cookbooks (Mayim's Vegan Table: More than 100 Great-Tasting and Healthy Recipes from My Family to Yours)** and it was awesome. I did add a little hot sauce!


 I used Daiya Cheddar Shreds and was initially a little scared by the look of it. Once I melted it up with almond milk though and mixed it into the pasta - it looked just like mac & cheese should look - gooey, cheesy, YUMMY!


I covered with whole wheat breadcrumbs and baked, then broiled to get it nice and crispy.


I definitely wouldn't call this a clean eating recipe but I was SUPER proud of myself for trying something new! This would be an awesome treat to replace a comfort food on a cold day and I will definitely be making it again. 


VEGAN MAC & CHEESE
16 oz. of pasta (I used whole wheat shells)
1 package of Daiya Cheddar Shreds
1 1/4 cup of Almond Milk
2 tsp of flour
2 tsp of whole wheat breadcrumbs
Salt & Pepper to taste


  • Cook pasta according to package until al dente, drain and set aside in a large bowl.
  • Heat 1 cup of almond milk in a large saucepan over medium heat.
  • Mix 1/4 cup of almond milk with 2 tsp of flour and whisk until smooth. Add this slowly to the pan while whisking.
  • Add Daiya Cheddar slowly, continue whisking, until smooth consistency and cheese sauce is bubbling.
  • Pour cheese mixture over pasta and mix to combine.
  • Spray a 9 x 13 baking dish with cooking spray and pour the pasta mixture in, top with breadcrumbs and bake covered at 350° for 20 minutes. Then take the foil off and broil on high for 5-7 minutes to get it browned and delicious!!

Inspired: Color

So I'm back at school this semester and my new favorite class is definitely Color for Interiors. I learned some really cool things yesterday and it's inspiring me to learn even more on the subject, but first...coloring is really fun (and I'm kinda good at it).

I found it pretty amazing that color can actually affect you physically...it can change your heart rate, your blood pressure!! Color is being used to aid in CURING illnesses. As I've become more in tune with my own health and fitness, I've found that I love natural remedies. I don't like putting chemicals in my body and I really find this fascinating.

Fun fact - the color blue promotes productivity and increased weight lifting ability in gyms! So if you're working on your fitness, do it somewhere that's painted a nice shade of blue.
